They came to me with a vision of what they wanted to grow and the type of business they wanted to build and trusted me to design the perfect system for their needs. I am happy to say that they were selling crops a few weeks after we started the system up and are currently selling to over 14 restaurants including the Four Seasons in Dallas as well as the Dallas Cowboys Stadium. They have only been open a short time and are already nearly selling out the growing area they have. Yseut summed it up great in a recent chat when she said "We don’t have to call the chefs, the chefs are calling us!"

"You cannot put a price tag on passion. After two decades as a chef I knew it was time to move out of the kitchen and to become a modern farmer. I had previously spent a summer working at an aquaponic farm and quickly knew it was what I wanted to do as my post-chef life - but I had no idea how to get started on my own. As a first time small business owner there was a lot to learn, and Ryan Chatterson was a god-sent!
Ryan didn’t just provide a cookie-cutter aquaponic system for me, he listened to what I wanted to grow and who my target clientele was going to be, and then designed a system that was purpose-built for my vision. Moreover, Ryan’s contacts and relationships in the industry, and with the purveyors of the equipment, greenhouse, and needed apparatus for a fully operational commercial farm, made the entire process much less stressful. He arranged the design, ordering, and even logistics and delivery of my entire farm! It literally all showed up one day on two trucks to my land! Then, when build-time came along, Ryan was there every step of the way. He provided remote support and answered all the crazy questions I had virtually every day, and even flew to the farm twice for the more technical set up and calibration of the system. And when I became increasingly stressed out and was feeling overwhelmed (as many first-time business owners do J) Ryan was as calm and accommodating as one could ever be. He reassured me when needed, and was flexible even when many others would likely not have been.
It is evident that Ryan is truly passionate about aquaponics, which is why he treats his clients so well. He wants you to succeed! After this experience, Ryan is not a consultant/contractor, he is a friend. MY Epicurean Farm would not be a reality today if it were not for the thoughtful work of Ryan Chatterson."
